Mackerel rundown 

 Mackerel Run Down a traditional dish that combines tender fresh and dried mackerel with sautéed vegetables and a rich spiced coconut sauce. Complimented with Boiled green banana and dumpling. 

  • 1kg Fresh or Tinned Mackerel 
  • 1 small onion sliced
  • 4 garlic cloves chopped 
  • 1/2 tsp. Sliced ginger
  • 1 scotch bonnet sliced 
  • 1/4 Red, green, yellow bell pepper strips 
  • 2 spring onions sliced 
  • 1 large tomato chopped 
  • 4 sprigs of fresh thyme
  • 200ml coconut milk 
  • 1 tsp. Sea salt 
  • 1 tsp. Black pepper
  • 1 tsp all purpose 
  • 3 pimento seeds
  • 1 tsp curry powder
  • Boiled dumping and green banana 
  • 175g plain flour
  • 125g cornmeal 
  • 1 tsp. Salt
  • 1 tbsp. Melted butter 
  • 1 tsp. Sugar 
  • 2 cups water 
  • 2 Green banana 
  • 1 lime.
  • In a pan add coconut oil on a high heat and saute your vegetables until soft.

Add coconut milk and stir well cook for 3 minutes and reduce the heat to low-medium. Season with salt, black pepper, all purpose, pimento and curry powder and mix together. Mix in Mackerel and cook for 7-10 minutes.

For dumplings add flour and cornmeal to a bowl, with salt, butter and sugar, then gradually add 2 cup of water and mix with a spoon. Once Dough starts to look crumbly, start to knead until the dough is dry, then shape in to circle dumpling shapes with a dimple in the middle. 

Boil 1 litre of water in a large pot with salt and lime, then add dumplings. Score bananas and cut of ends then add to water and boil for 20 minutes. Once cooked remove banana and peel.
