Healthy, sweet and spicy FLAVA! with this incredible recipe. If your looking for a quick and easy mid week meal prep idea look no further! succulent chicken breast cooked with spices and a delicious mango chutney sauce on top of a refreshing plantain salad with spinach, tomatoes and cucumber.

  • 2 large chicken breasts
  • 1 tsp. sea salt
  • 1 tbsp. coarse black pepper
  • 1 tbsp. dried thyme
  • 1 tsp. garlic powder.
  • 1 tbsp. all purpose seasoning.
  • 1 tsp. chilli flakes
  • 1 tbsp. olive oil.
  • 330ml mango chutney
  • 2 Ripe plantains
  • 100g fresh spinach
  • 1/2 cucumber sliced
  • 6 cherry tomatoes

Season chicken with salt, black pepper, dried thyme, garlic powder, all purpose seasoning and chilli flakes then add olive oil and massage together.

Add olive oil to a frying pan on a medium heat and cook chicken until golden brown on each side. Pour in mango chutney sauce stir in and summer until cooked.

fry plantain until golden brown then plate up with some spinach, tomatoes and cucumber. slice up the chicken and place on top!
