Plantain in batter, inspired by the infamous sausage in batter, is a lighter and more healthier version which gives you something new and different on your weekends. The sweetness of the plantain and spiced crispy batter makes a delicious meal for family and friends
2 ripe plantains
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp dried thyme
150g plain flour
200ml coconut milk
1 tsp paprika
1 tsp dried thyme
1 tsp. Salt
75ml water
150g Flour
1 tsp baking powder
1 tbsp curry powder
Oil to deep fry
4 baking potatoes.
1 tsp cornflour.
In a mixing bowl add 2 peeled ripe plantain then add olive oil. Salt, black pepper, paprika, dried thyme then mix together.
In a mixing bowl add coconut milk to your plain flour season with paprika and thyme then add water and whisk until smooth.
In a separate bowl add flour, baking powder, curry powder and mix.
Add plantain to your wet mixture and cover well then add plantain to dry mixture and cover well.
Deep fry plantains for 5 mins on each side until golden brown then add to over for 10 more minutes.
Slice your potatoes chip style then add to a mixing bowl with some cornflour then
Toss. Deep fry for 5 minutes.
Serve with garden peas
