  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tbsp all purpose seasoning
  • 1 tbsp dried thyme
  • 1 tbsp garlic
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 6 garlic cloves
  • 200ml red label wine
  • Handful of fresh thyme
  • 2 scotch bonnets
  • 100g flour
  • 2 tbsp Meat stock
  • 250ml boiling water
  • 4 tbsp jerk bbq sauce
  • 1 tbsp garlic
  • Salt to taste
  • Stock from lamb tray.
  • 2Kg Leg of Lamb

In a mixing bowl add oil, paprika. all purpose. dried thyme, garlic, salt and black pepper then mix together into a paste.

Pierce the lamb all over using a sharp knife then massage all the seasonings in, then add garlic cloves in the pierced holes wrap in foil then marinate over night.

In a baking tray add olive oil, fresh thyme and scotch Bonet, then place lamb on top then cook for 2 hours. depe

For the gravy you’ll need a saucepan, will flour meat granules, Jerk bbq sauce, garlic, salt and pepper to taste. turn off the heat then simmer.
