Rum roasted potatoes
Christmas isn’t the same without Roast potatoes, especially with these Rum roasted spiced roasties! They are crispy on the outside and tender on the inside and Packed with so much FLAVA! You’ll never by roast potatoes from the supermarket again!.
- 1kg White potatoes (Maris piper or baking potatoes)
- 500ml water Likkle sea salt
- 25-50ml dark or spiced rum
- 1 tsp sea salt
- 1 tsp coarse black pepper
- 1 tsp. paprika
- 1tsp. mixed herbs
- 120g unsalted butter (melted)
- 4 tbsp. extra virgin olive oil
- 3-4 sprigs of rosemary or fresh thyme
- 4-6 pimento seeds
- 4 garlic cloves skin on
- 2 spring onions
Add water to a large pot then bring to a boil and add your potatoes then season with a Likkle sea salt. Boil for 8-9 until slightly soft. Drain water from potatoes and carefully toss them 3-4 times until they are rough around the edges. Add rum and season with salt, black pepper, paprika, mixed herbs then toss a few times.
Use a large oven tray and add melted butter, extra virgin olive oil and evenly spread across the tray. Add garlic, pimento, spring onions, rosemary to the tray then add potatoes. Spread the potatoes so they have 1cm space between each other. Add to pre-heated oven and cook at 180 degrees for 50 mins. Halfway through turn potatoes over. Cool down for 10 minutes and enjoy.
