Spiced Guava lamb
The best lamb you’ll ever taste! Cooked with Caribbean spices and a sweet and spicy sauce. The perfect recipe for the family on the weekend.
- Half leg of lamb
- 1 tbsp. Olive oil
- 1 tbsp. Melted butter
- 1 tsp sea salt
- 1 tbsp. Coarse black pepper
- 1 tsp. Ground pimento
- 1 tbsp. All purpose seasoning
- 2 whole garlic cloves
- 2 sprigs of rosemary
- 2 sprigs of thyme
- 1 scotch bonnet halved
- 1 spring onion halved
- 500ml water
- 250g Guava jam
- 1 tbsp. Stock
- Salt and pepper to taste
- 1 tbsp. Jerk bbq sauce
- Pre- heat oven to 180 degrees
- Add olive oil and melted butter to the lamb, then season with salt, black pepper, pimento and all purpose seasoning, then mix together.
- Add garlic cloves, rosemary, thyme, spring onion and scotch bonnet on top then wrap with foil.
- Add 250ml water to your oven tray, then place wrapped lamb on top – cook in oven for 1 hr.
- To make sauce add guava jam to a saucepan with stock and water, season with salt and pepper, then add jerk bbq sauce stir and bring to a boil for 5 minutes.
- Once lamb is cooked pour gravy on top then slice and serve.
