The best lamb you’ll ever taste! Cooked with Caribbean spices and a sweet and spicy sauce. The perfect recipe for the family on the weekend.

  • Half leg of lamb 
  • 1 tbsp. Olive oil 
  • 1 tbsp. Melted butter 
  • 1 tsp sea salt 
  • 1 tbsp. Coarse black pepper 
  • 1 tsp. Ground pimento
  • 1 tbsp. All purpose seasoning 
  • 2 whole garlic cloves 
  • 2 sprigs of rosemary 
  • 2 sprigs of thyme 
  • 1 scotch bonnet halved 
  • 1 spring onion halved 
  • 500ml water
  • 250g Guava jam 
  • 1 tbsp. Stock
  • Salt and pepper to taste 
  • 1 tbsp. Jerk bbq sauce 
  1. Pre- heat oven to 180 degrees 
  2. Add olive oil and melted butter to the lamb, then season with salt, black pepper, pimento and all purpose seasoning,  then mix together.
  3. Add garlic cloves, rosemary, thyme, spring onion and scotch bonnet on top then wrap with foil. 
  4. Add 250ml water to your oven tray, then place  wrapped lamb on top – cook in oven for 1 hr.
  5. To make sauce add guava jam to a saucepan with stock and water, season with salt and pepper, then add jerk bbq sauce stir and bring to a boil for 5 minutes. 
  6. Once lamb is cooked pour gravy on top then slice and serve.
