The perfect recipe for the family at home, its cheesy veggie and has loads of flava! A great way to get your daily vegetable in! The kids will love this! get it a try!
- 1 medium onion diced
- 4 garlic cloves chopped
- 1 scotch bonnet chopped
- ½ yellow bell pepper diced
- ½ red bell pepper diced
- 2 spring onions diced
- 200g Mushrooms sliced
- 150g sweetcorn
- ½ carrot diced
- 1 tsp. salt
- 2 tsp. black pepper
- 2 tsp. all purpose seasoning
- 200g chopped tomatoes
- 500g spiral pasta
- 1 tbsp. butter
- 300g grated cheese
- 400ml coconut milk
- Chopped parsley garnish
- 1 tsp. dried thyme.
In a frying pan use some vegetable oil on a medium heat and cook down your onions, garlic and scotch bonnet pepper until caramelised.
Then add in bell peppers, spring onions, mushrooms, sweet corn, carrots, then season with a ½ tsp salt, 1 tsp. black pepper, 1 tbsp. all-purpose seasoning then mix together. Then add chopped tomatoes and cook down for 5 minutes.
Now cook your pasta in boiling water until cook then drain out the water. Then add you butter, 150g cheese, 1 tbsp. all-purpose seasoning, Likkle salt and black pepper coconut milk then mix di ting!
Add in your veggie mixture and mix together. Then use 150g cheese on top and sprinkle a Likkle thyme on top! Bake in the oven for about 15 minutes until golden brown, then garnish with some parsley.
