One Pot Jerk Chicken Rice and Peas! So easy so Delicious!, This ones a winner- and the GRAVY! Mad ting! Dinner is served!

4/5 Leg Thigh Quarters
2 Tbsp. Jerk seasoning rub
2Tbsp. Jerk marinade
1 tsp. Thyme
1 small onions
2 Garlic cloves
2 spring onion
400g Tinned Kidney beans
250ml Chicken stock
200ml coconut milk
1tsp Salt
1tsp Ground Pimento
400g washed Long grain rice

Gravy
Chicken drilling juices
2tbsp. chicken granules
250ml hot water

Nanny use to always say “ Mek sure you score di Chicken so that seasonings go deep in, Well Nanny was right.. I used a Dry & Wet Jerk rub here with a likkle thyme and mixed together.

Cook Chicken in a cast iron dish for about 30 mins until Dark and lovely just like me then remove, Pour out most of Chicken juices into a bowl – that’ll make the gravy.

Add some vegetables oil, onions, garlic, scallion,tinned kidney beans because Im not waiting overnight to eat this, Chicken stock, coconut milk , pimento , salt, stir in washed rice and mix in evenly.

Add Chicken back in then cook in oven for around 30 minutes until everything is cooked..

One Pot Jerk chicken & rice and peas mi seh! Saving time, saving money but not saving on Flava!
