The creamiest and cheesiest Mac and cheese all in one pot, saving you time and washing up! Perfect side dish to accompany your meal. 

  • 1 litre water
  • 1 tsp salt
  • 500g Pasta 
  • 1 tbsp. Butter
  • 1 tbsp. Olive oil
  • 1 red onion diced
  • 4 garlic cloves 
  • 2 spring onions diced
  • 1 scotch bonnet de- seeded 
  • 500ml double cream 
  • 250g ricotta 
  •  250g grated cheddar cheese 
  • 150g condensed milk
  • 200ml coconut milk
  • 1 tsp. Paprika
  • 1 tsp Dried thyme 
  • 1 tsp All purpose seasoning
  • 150g Grated Red Leicester cheese 
  • 150g  grated mature cheddar 
  • 150g mild sliced cheese 
  • 200g fresh mozzarella 
  • Cheese crackers & breadcrumbs for topping 
  • Mixed herbs 

Cook your pasta then drain and set aside.

Sauté onions, garlic, spring onions, scotch bonnet until translucent. Add double cream ricotta, cheese, condensed milk and coconut milk bring to a boil and stir well. Season with paprika, all purpose, dried thyme, then add pasta back in gradually then stir in well.

Top with All three cheeses, mozzarella, crackers and breadcrumbs and top with some mixed herbs.
