We saw this dish in Jamaica and loved the use of Green banana, which is often used in soups and stews. This time we’ve combined it with a family favourite with some potato salad  perfect for BBQ season as a side dish!

  • 2 Green bananas
  • 2 large white potatoes
  • 1 small onion chopped
  • 3 spring onions
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 165g tinned sweet corn
  • 4 tbsp. mayo
  • 1 tsp dried thyme
  • 1 tsp sea salt
  • 1 tsp black pepper

Firstly bring a large pot of salted water to a boil

Cut off the ends of your green bananas, then score a line down the middle of the skin and add to your pan of boiling water. cook for 20 minutes until soft. Use tongs and remove the bananas from the pan then carefully take the skin off and set aside.

Cook the diced potatoes in a pan of boiling water for 10 minutes until tender. then drain and set aside.

Cut the cooled green bananas and place in mixing bowl, along with onions, spring onions, bell peppers, sweetcorn and potatoes and mix together.

Add mayo, then season with salt, black pepper, thyme and salt. gently mix together making sure you don’t break the banana and potatoes.
