• 1 Red bell peppers
  • 2 Red onions 
  • 3 small tomatoes 
  • 8 garlic cloves 
  • 1 scotch bonnet 
  • Thumb of ginger 
  • 125ml water 
  • 1 tbsp. Tomato purée 
  • 1 tsp sea salt 
  • 1 tbsp. Tsp all purpose 
  • 2 bay leaves 
  • 300g washed Quinoa 
  1. To your Air fryer – Red bell peppers, 1 red onions,  tomatoes garlic, ginger, and roast for 10 minutes until charred. Then add all to a blender with some water and pulse for 5-10 seconds.
  2. In a saucepan add some cooking oil on a medium heat with red onions and tomato purée then sauté for 3-4 minutes until translucent.
  3. Now add the tomato mix to the sauce pan and mix in and add salt, black pepper, all purpose and bay leaves. Mix in your quinoa and add a touch of water so that level is a few inches above the quinoa. Bring to a boil for 5 minutes then put on a low heat with some foil and cook for 25 minutes.
