Ackee and Avocado salad

  • 1 can Ackee 540g
  • 1tsp sea salt
  • 1tsp black pepper
  • 1tsp Thyme
  • 1tsp scotch bonnet pepper
  • 3 cloves garlic
  • 1/4 onion
  • 1 spring onion
  • 1 tbsp. Cocunut oil
  • 1/4 Lettuce
  • 1 tomato
  • 1/4  red pepper
  • 1/4 Green pepper
  • 1/2 cucumber
  • 1 avocado
  • Lemon juice
  1. Chop and Combine 1/4 Lettuce, 1 tomato, 1/4  redpepper, 1/4 Green pepper, 1/2 cucumber
    1 avacado in a bowl and mix together. Then place In fridge.
  2. On a frying pan on high heat use 1 tbsp. Cocunut oil sortay 1/2 chopped onion, 3 cloves of garlic 1 chopped spring onion 1tsp scotch bonnet pepper for 3 mins
  3. Then drain the tinned ackee and carefully pour into frying pan and let it sit.
  4. Add 1 tsp sea salt, 1tsp black pepper, 1tsp thyme and carefully fold over the ackee and simmer for 5 mins.
  5. Combine ackee with salad squeeze lemon juice and serve.
