This flavourful vegan dish is amazing! Even if you’re a meat eater you’re sure to enjoy it. The Curry spices and sweet coconut flavour will have your mouth drooling for days. Similar to to our ital soup recipe but packed with more FLAVA. We recommend having this stew with some coconut or plain rice; even rice and peas taste great!
- 250g Pumpkin
- 200g Sweet potatoes
- 150g Okra
- 1 Cho Cho (chopped)
- 1 plantain (sliced)
- 2 tsp. Black pepper
- 2 tsp. Thyme
- 2 tsp. Paprika
- 2 tsp. Garlic
- 2 tsp. Ginger
- 2 tsp. Curry powder
- 1 large onion (chopped)
- ½ small red onions (chopped)
- 2 Whole scotch bonnet peppers
- 1 tbsp. Vegetable oil
- 2 vegetable stock cubes or 1 tbsp. Vegan stock granules.
- 400ml coconut milk
- 100g Yam (Optional)
- Firstly add olive oil to a large pot and turn onto high heat, add chopped onions and sortey for 2 minutes.
- Then season with 2 tsp. Black pepper, 2 tsp. Thyme, 2 tsp. Paprika, 2 tsp. Garlic, 2 tsp. Sea salt, 2 tsp. Ginger
- Then add Pumpkin and sweet potatoes and coconut milk and mix together.
- Then add 2 cups of water to the mixture and stir together, and then simmer for 20 minutes until pumpkin and sweet potatoes are soft.
- Add Okra, Cho Cho, Plantain, scotch bonnet and fresh thyme and mix in together then add more curry powder inside the pot, along with coconut milk and vegetable stock or vegan granules, let it cook for 15 minutes.
- Add parsley and then simmer for further 5 mins.
- Then serve.
