Chicken soup is one of the most iconic and traditional meals in Caribbean food history, it’s hearty, nutritious and full of FLAVA! a recipe for the whole family to enjoy! give it a try!

  • 1.5 litres of water
  • 3/4 Leg quarters cut into pieces (Skin off)
  • 1 tsp. salt
  • 1 tsp all purpose seasoning
  • 1 tsp mixed herbs
  • 240g Diced pumpkin or butternut squash
  • pinch of salt
  • 1 tsp Black pepper
  • 1 tsp. pimento
  • 1 small onion diced
  • 2 spring onions chopped
  • 1 tbsp. fresh grated ginger
  • 4 garlic cloves chopped
  • 200g sweet potato peeled & diced
  • 200g Yam peeled & diced
  • 1 corn on the cob cut into 5
  • 1 carrot sliced
  • 200g Cho Cho diced
  • Dumplings & spinners
  • 1 whole scotch bonnet
  • 4-6 sprigs of fresh thyme
  • 1 pack cock soup mix

Firstly you’ll need to add some water to a large cooking pot, then bring to  bowl. Then cut up your chicken into pieces and take skin off and season with salt, pepper, all purpose seasoning and mixed herbs. then add to your pot.

Now add pumpkin or butternut squash and season, salt, pepper, pimento and mix together and cook down for 20 minutes.

Now add onions, spring onions, garlic, ginger, carrots, sweet potatoes, yam and corn, cho cho then mix and cook for further 15 mins until tender.

Add dumplings, scotch bonnet and fresh thyme and cook for 15 minutes. then add cock soup mix and cook for further 5 minutes then simmer and serve.
