The best Jamaican soup ever! The perfect recipe when the weather is cold. The juicy chicken pieces, and hearty vegetables make a heart warming soup that’s believed to work as a cold remedy. Though Jamaicans include this in the Sat’day soup category it can be eaten any day of the week.
- 450g Skinless Chicken pieces
- 300g pumpkin, peeled de-seeded and cut into 2.5 cm cubes
- 1 tsp. salt and pepper
- 1 tbsp. all purpose seasoning
- 6 pimento seeds
- 1 medium onion
- 2 spring onions
- 1 tsp. garlic & ginger
- 200g sweet potato peeled and cut into bite sized pieces
- 150g yam peeled and chopped
- 1 large corn on the cob cut into chunks
- 1 large carrot peeled and sliced
- 1 cho cho cored and diced
- dumplings and spinners
- 1 scotch bonnet
- 4 fresh thyme sprigs
- 50g cock & pumpkin soup mix
- Bring 1 litre of water to a boil in a large pot.
- Skin the chicken off the legs and thighs, and season with salt pepper and all purpose seasoning then dash the chicken into the pot, along with pumpkin and cook for 30 minutes.
- add onions, spring onions, garlic, ginger, then stir in well, then add sweet potato, yam, carrots, corn and cho cho. then bring to a boil and cook until veggies are tender,
- Add in your dumplings and spinners, along with scotch bonnet and thyme and cook for further 15 minutes, followed by cock soup mix and stir well then simmer for 5minutes.
