Our flavalicious variation on the traditional Jamaican stew beef is to use one of Shaun’s favourite drinks Dragon stout! It provides a great combination to enhance the flavours of the stew.

  • 1.35 kg diced beef
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground pimento
  • 1 tsp browning
  • 2  tsp plain flour
  • 1 tbsp. vegetable oil
  • 1 medium onion
  • 4 garlic cloves
  • 284ml dragon stout
  • 1 scotch bonnet pepper
  • fresh thyme
  • 6 baby potatoes halved
  • 2 carrots chopped

Season beef with salt, pepper, pimento, browning and flour and mix together. Cover and marinate in the fridge.

Add cooking oil to a large pot or pan on a high heat and dash n the beef pieces and saute until brown all over. Remove beef from pot and set aside.

Now add a likkle more oil in your pot/pan and cook down some onions and garlic, then cook down until soft.

Now add your stout and give it a stir, then wait for it to boil. dash the beef back in the pot and mix together, add beef stock with water, scotch bonnet, thyme, and cook until beef is tender.
