- Wholemeal Hardo’ Bread (cut in bitesize pieces)
- 2 Large chicken breasts (Butterfly)
- Olive oil
- 1 tsp sea salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1tbsp. All purpose
- 1 tsp. dried thyme.
Dressing
- 4 tbsp. full fat yogurt
- 5 anchovies
- 1 tbsp. olive oil
- Juice of half a lemon
- ½ scotch bonnet (de-seeded)
- 1 whole garlic roasted.
- Salt and pepper to taste
- 2 Romaine lettuce
- Parmesan cheese
- Dried chillies for garnish
- Cut up bread into bite sized pieces and season with salt pepper, dried thyme and olive oil then add to baking tray and cook for 20 minutes on 200 degrees.
- Butterfly your chicken breast and season with salt pepper, all-purpose garlic powder paprika and let it marinate for 10 minutes.
- To make the dressing blend together yogurt, anchovies, olive oil, lemon, roasted garlic, scotch bonnet, lemon juice anchovies salt and pepper to taste.
- In a frying pan add olive oil on a high heat then place your seasoned chicken away from you on the pan. Cook for 5 minutes on each side until cooked. Slice chicken then set aside.
- Assemble salad by chopping up 2 romaine lettuce then adding to a bowl with croutons, chicken breasts and dressings. Toss well then Top with parmesan cheese and enjoy.
