Crispy panko salmon

- Whole salmon fillet cut into pieces
- 1 tsp sea salt
- 1 tbsp. Black pepper
- 1 tbsp. Fish seasoning
- 1 tsp. Garlic seasoning
- 150g Panko breadcrumbs
- 150g cornflour
- 2 beaten eggs
- 200g guava jam
- 1 vegetable stock cube
- 250 ml Water
- Salt n pepper to taste.
Pan your salmon dry then season with salt, pepper, fish seasoning and garlic.
In a separate bowl, mix breadcrumbs and cornflour, whisk to eggs then Add salmon into egg then into flour mixture. Then deep fry in oil for 3-4 minutes.
In a saucepan add guava Jam, veggie stock and water, bring to a boil then mix. Seasoning with salt and pepper then reduce heat.
Pour guava sauce on top of salmon then enjoy!
