  • 2 Overripe Plantain peeled and chopped
  • 250g plain flour
  • 350ml almond milk
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tbsp golden syrup
  • 1 tsp vanilla extra
  • vegetable oil
  1. Place plantain in a blender, pour almond milk in and blitz til smooth
  2. Pour mixture in bowl, sieve plain flour into bowl and mix.
  3. Add baking powder, salt, golden syrup, vanilla extract and mix
  4. Add 1tsp of oil to a non-stick frying pan, use a kitchen paper to spread around the pan. Once the pan is hot, pour in some pancake batter allowing it to spread from the the centre into a pancake shape.
  5. Cook until start to see bubbles then flip – cook until golden brown.
  6. Add fruit of your choice and syrup for topping
