Our spin on a whole salmon is a family favourite every Christmas. It always goes down with the whole fam. we don’t just make regular salmon, we make salmon with FLAVA.
- 1 whole salmon
- olive oil
- handful of okra
- 2 lime wedges
- Handful of scotch bonnets
- 4 spring onions sliced
- handful of fresh thyme
- 2 garlic cloved
- Jerk marinade 4 tbsp.
- Black pepper
- all purpose seasoning
Get your fishmonger to scale and gut out the salmon, then use a sharp knife to score parallel lines diagonally along the fish on both sides.
Unroll a large amount of foil and base on a oven tray, then pour on some olive oil, then spread out the okra, lime wedges, and scotch bonnets.
Season the fish with black pepper and all purpose seasoning.
Massage the honey & jerk marinade onto the fish on both sides making sure all the seasoning gets inside the slits. Then place the fish on top of the vegetables. Slice spring onions, and place inside the salmon cavity along with the fresh thyme and garlic cloves.
Wrap the foil into a parcel, leaving some air space above the fish. Marinate for a few hours.
Pre-heat oven to 180 degrees and cook for upto an 1hr untilsalmon is cooked.
