Jamaican Pepper Prawns

These Jamaican Pepper Prawns are bold, vibrant and full of authentic Caribbean flavour — ready in under 10 minutes. Juicy prawns are tossed with garlic, fresh herbs, black pepper and fiery scotch bonnet, then finished with a squeeze of lemon for the perfect balance of heat and freshness.

Ingredients

•500g raw prawns (peeled & deveined)

•¼ tsp sea salt

•1 tsp black pepper

•1 tsp all-purpose seasoning

•1 tsp paprika

•4 garlic cloves, finely chopped

•2 spring onions, thinly sliced

•½ onion, sliced

•½ scotch bonnet, thinly sliced (adjust to heat preference)

•Juice of ½ lemon

•Handful fresh parsley, chopped

Method

1.Add prawns to a bowl with salt, black pepper, all-purpose seasoning and paprika.

2.Toss in garlic, onion, spring onions and scotch bonnet. Mix everything together well.

3.Heat a pan over medium-high heat.

4.Add the prawns and cook for 3–4 minutes, stirring occasionally, until pink and slightly caramelised.

5.Squeeze over fresh lemon juice.

6.Garnish with parsley and serve immediately.
