Vegan Caribbean Bangers & Mash
- Brown stew vegan sausages, w/ Plantain mash
- 4x50g Vegan sausages
- 2 tbsp. Jerk paste
- 1 tbsp. All purpose seasoning
- 2 tbsp. Olive oil
- 1 small red onion (rings)
- 2 garlic cloves
- 1 tsp. Browning / dark soy sauce
- 1 tbsp. Vegan granules
- 240ml water
- 1/4 scotch bonnet pepper
- 1 tbsp. Fresh parsley
- 2 ripe Plantains
- 100ml soy milk
- 1 tbsp. Vegan butter
- Pinch of salt and pepper.
Firstly you’ll need to season your vegan sausages with some Jerk paste
And all purpose seasoning then dash in the oven for 10 mins at 180 degrees.
In a medium frying pan add some olive oil on a high heat, add onions and garlic and caramelise for a few minutes. Then add browning vegan granules and water then mix and create a stew. Add cooked sausages then cook for 5 minutes until done. Garnish with scotch bonnet and parsley.
For plantain mash, add some water to a medium sized saucepan halfway and bring to a boil, add chopped plantain and cook for 10 minutes. Drain water then add soya milk, vegan butter, salt and black pepper then mash with a potato masher.
