ITAL IS VITAL! On our trip in Jamaica we learn a lot about the ital/vegan lifestyle and how creative rastas are with their food. This “Rasta pasta” dish really celebrates that culture with a more modern swing including the vibrant rasta colours using veggies, making it super tasty. Fully plant based recipe with a creamy cheesy sauce. Yeah mon!

  • 500g Penne pasta
  • 1tbsp. vegetable oil
  • 1 medium onion (diced)
  • 1 medium red onion (diced)
  • 3 Spring onions (diced)
  • 4 garlic cloves (Minced)
  • 1 scotch bonnet pepper (diced)
  • Bunch of fresh thyme
  • 2 large tomatoes (diced)
  • 1 Red bell peppers (Sliced)
  • 1 Yellow bell peppers
  • 1 Green bell peppers
  • 400ml coconut milk
  • 250g grated vegan cheese
  • 1 tsp. Sea salt
  • 1 tsp, Black pepper
  • 1 tsp. All spice/pimento

you will need a large frying pan, with some vegetable oil on a medium heat. Then add your onions, spring onions, garlic cloves, and scotch bonnet pepper then cook down until vegetables are soft. Then add a bunch of fresh thyme, tomatoes and bell peppers then mix all the vegetables. Now add some coconut milk and vegan cheese then mix di ting! Season with salt, black pepper and all spice and give di ting ah mix! Add in cooked pasta, then mix together and serve. Serves 4 people.
