Welcome to episode 2 of our salad series. Bringing you quick healthy light recipes for weight loss. Bringing you some sweet and fiery jerk mango chicken with a delicious fresh salad to cool you down. 

Mango Jerk marinade

  • ½ Ripe mango chunks
  • 1 medium onion chopped.
  • 2 spring onions chopped.
  • 6 fresh thyme sprigs
  • 5 pimento seeds
  • 2 scotch bonnet pepper
  • ½ tsp. browning
  • 6 garlic cloves
  • 25ml apple cider vinegar
  • ½ Juice of lime
  • 150ml water
  • Pinch of salt & pepper
  • 300g Boneless Chicken thighs
  • 1 tsp. sea salt, Black pepper, garlic powder, dried thyme. Chilli powder


  • 150g Mixed leaves
  • 1 red onion diced.
  • 1 Ripe Avocado chopped.
  • 1 red bell pepper diced.
  • ¼ Ripe Mango chunks
  • ½ cucumber diced


  • ¼ Mango chunks
  • ½ yellow bell pepper chopped
  • 1 tbsp. olive oil
  • ½ juice of a lime.
  • Pinch of parsley.


Jerk mango marinade

Make Jerk mango marinade by blending the above ingredients in a blender for 10 seconds then set aside.

  1. Wash chicken thighs with lime and vinegar then season with salt, pepper, garlic, dried thyme, chilli powder, all-purpose and 2 tbsp. Jerk mango marinade then mix then marinate for 10 minutes in fridge.
  2. Take the seasoned chicken out of the fridge, then add to your Air fryer, and cook for 20 minutes at 180-200 degrees. While the chicken is cooking make a dressing by add mangoes, olive oil, lime juice, yellow bell peppers and parsley to a blender and blend until smooth.
  3. For the salad., Chop up all your vegetables and add to an individual bowl, then in a separate bowl Add mix leaves with some olive oil then mix together.
  4. Assemble your salad by adding mixed leaves to the base, followed by the rest of the veggies in each corner of the bowl.
  5. Then take out your chicken chop into two and place on top of the salad with some dressing on top. Garnishes with some dried chillies and parsley then enjoy.
