Escovitch grilled sea bass. We grilled on the BBQ but can easily cook in the oven too! Light, quick and delicious!

Ingredients
2 whole sea bass
1tbsp Paprika
1 tbsp garlic powder
1 tsp black pepper
1 tbsp salt
Olive oil
2 large carrots
2 spring onions sliced
Bunch of thyme
2 medium onion sliced
1 lemon sliced
Half scotch bonnet or chilli pepper sliced
1 tsp jerk powder seasoning
1 tsp pimento seeds
1 tsp sugar
1tsp vinegar
150ml of fish stock

Method

Firstly slice all your vegetables; carrot, spring onions, onion, lemons. Score the Sea bass and season with olive oil, paprika, garlic powder, salt and black pepper, and rub all over.

Use half of the sliced vegetables and stuff inside the Sea bass. Place on the grill and cook for around 5-7 minutes on both sides until you get your preferred grilled charred consistency.

Now for the escovitch dressing; add butter to a frying pan, then add the remainder of your vegetables, add jerk seasoning and pimento seeds, fish stock and sugar, then cook til the vegetables are partialy sautéed. Garnish on top of the fish and enjoy!
