Forget the Rice and try this delicious Bulgur wheat and peas with Air fryer jerk chicken. So simple and tastes even better than rice in our opinion, this is now our go to for sunday dinner!

  • 4 Chicken leg quarters 
  • 2 tbsp. Jerk seasoning rub 
  • 2 tbsp. Jerk paste marinade.
  •  X2 Tins Kidney beans 
  • 500g Bulgar wheat 
  • 1 tsp. sea salt 
  • 1 tbsp. black pepper 
  • 1 tbsp. Jerk seasoning or all purpose 
  • 1 tsp pimento seeds 
  • 4-6 fresh thyme sprigs 
  • 1 Spring onion 
  • 150g creamed coconut 
  • 400ml coconut milk 
  • 1 scotch bonnet pepper or 2 tbsp. hot pepper sauce 
  • 125ml water 


  1. Firstly, score your chicken then season with Jerk seasoning and marinade then massage well then place an air fryer and cook for 20 minutes at 200 degrees, then turn over and cook for 5 minutes.
  2. In a saucepan add tinned kidney beans with liquid then season with salt, pepper, all purpose, fresh thyme, spring onion, pimento seeds, coconut milk then stir well Then bring to boil for 5 minutes.
  3. Mix in bulgar wheat then add some water making sure the water level is 2 cm above grains.  Cover and Cook on a low heat for 15 minutes.
  4. Serve with fresh salad.
