• 1 medium onion
  • 2 tsp. salt
  • 1kg macaroni
  • 1tsp butter
  • 2 tsp black pepper
  • 500ml whole /almond milk
  • 2 eggs beaten
  • 1 tsp mustard (optional)
  • 1 tsp honey
  • 1 tsp chilli powder
  • 1 tsp scotch bonnet pepper
  • 300g red Leicester cheese
  • 300g mild cheddar
  • 300g mozzarella
  • 50G cheese crackers optional

Add boiling water to a large saucepan and bring to a boil, then add macaroni and cook for 12 minutes. add salt, black pepper and some butter.

for the sauce add some milk, eggs, flour, paprika, honey, onions, scotch bonnet and cheese then mix together and cook down.

add sauce to the pasta and mix together, then use a casserole dish and add pasta to the dish one layer at a time added cheese on each layer.

Then sprinkle some cheese crackers on top of the mac and cheese then back for 25 minutes until golden brown and crispy on topp.
