Ackee and saltfish with fried dumplings is a must have on Christmas morning! Jamaicas national dish is the perfect dish to start a busy day. We have so many memories waking up to the sweet smelling FLAVAS in the morning!
- 300g boneless saltfish
- 1 onion diced
- 4 garlic cloves
- 2 spring onions chopped
- 1 scotch bonnet
- 1 bell pepper chopped
- Fresh thyme
- 1 tomatoes
- 520g Ackee
- 250g self raising flour
- Sugar
- Salt
- Black pepper
- Butter
- Deep fry oil
Boil saltfish in a sauce pan for 10 minutes and change water 2/3 times over to remove access salt then break into pieces. In a frying pan add cooking oil on a medium heat, onions, garlic, spring onion, scotch bonnet and cook down until soft. Add Saltfish and cook for 5 minutes then season with black pepper pimento fresh thyme and mix together. Add bell peppers and tomatoes then add ackee stir in gently then add black pepper.
