Using @youngsseafood fish fillet quarter pounders. We added extra FLAVA with a likkle seasoning (yes, we season frozen fish too!) and traditional Caribbean escovitch dressing pon top, making this the easiest and most delicious fish burger you’ll ever eat! #YoungsKitchen

  • Young’s Chip Shop 4 Fish Fillet Quarter Pounders 454g
  • 1tbsp. dried thyme
  • 1 tbsp. all-purpose seasoning
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • ½ carrot sliced
  • 1 scotch bonnet sliced
  • 1 medium onion sliced
  • 2 tbsp. vegetable oil
  • 1 tsp. sugar 1 tsp. vinegar
  • 1 tsp. salt
  • 1tsp. black pepper
  • 4 tbsp. mayo
  • 2 tbsp sweet chill sauce
  • Lettuce to garnish
  • 4 Brioche buns

Firstly, season the cod fillets with all-purpose seasoning and dried thyme, then cook in oven for 22 minutes

Then sliced up all your veggies, then use a large frying pan on a medium heat with some vegetable oil then add all the veggies, and add sugar, vinegar, salt and black pepper and a Likkle thyme.

Toast your brioche buns in the pan for 30 secs on each side then set side. In a small bowl, add mayo and sweet chilli sauce then mix.

Assemble your burger by adding some sweet chilli mayo to the base, then lettuce, the fillet quarter pounder then the veggie dressing on top.
