Brown Stew Salmon with Coconut Couscous. Let’s go!”

Welcome to our Caribbean meal prep series 

We’re showing you how to eat GOOD all week – full of flava, saving time, and keeping it healthy.

 Ingredients

For Salmon:

•4 Salmon fillets

•1/2 tsp Salt

•1/2 tsp Black pepper

•1 tsp Garlic powder

•1 tsp All-purpose seasoning

•1/2 tsp Paprika

•1/2 tsp Browning

•1 tbsp Olive oil

For Brown Stew Sauce:

•1 Onion (sliced)

•4 Garlic cloves (diced)

•1/2 each Red, Green & Yellow bell peppers (cut into strips)

•150ml Vegetable stock

For Coconut Couscous:

•250g Pre-cooked couscous

•200ml Coconut milk

•1 tsp garlic powder

•1 tsp All-purpose seasoning

•1/4 tsp Black pepper

•Pinch of Salt

•2 sprigs Fresh thyme (or 1/4 tsp dried)

 

  1. “Warm up your pre-cooked couscous in a pan and with coconut milk water , garlic, thyme, all-purpose, salt and pepper. Mix and steam through for 5 minutes.
  2. “Season your salmon with salt, pepper, garlic, paprika, all-purpose, and a splash of browning and massage in.
  3. Pan-sear both sides in olive oil until golden, then remove and set aside.”
  4. “In the same pan, sauté onions, garlic,  scotch bonnet and your bell peppers til soft.
  5. Add vegetable stock, bring it to a simmer, then gently place your salmon back in and cook for 10 minutes.
  6. Let it steam down in that beautiful  brown stew sauce.”
