A quick and easy Jamaican classic, born out of struggle, but packed with rich flavour and comfort. This is a true cupboard meal — budget-friendly, family-approved, and done in under 30 minutes.
Ingredients:

1 medium onion, sliced

4 garlic cloves, minced

¼ scotch bonnet pepper, diced (optional for heat)

½ green bell pepper, sliced

½ red bell pepper, sliced

A handful of cherry tomatoes, halved (or 1 large tomato, diced)

1 tin of corned beef
-
½ cup tomato ketchup
-
1 cup tinned sweetcorn (drained)
To Serve:

Steamed white rice

Sliced avocado
Method:

In a large frying pan, heat a little oil on medium heat.

Sauté onions, garlic, scotch bonnet, and bell peppers for 3–4 minutes until softened.

Add tomatoes and cook for another 2 minutes until slightly broken down.

Add the tinned corned beef, breaking it up gently with a spoon. Stir until fully combined.

Mix in the ketchup and sweetcorn. Let simmer for 5 minutes until thickened and saucy.

Season with black pepper to taste (corned beef is already salty, so no need to add more salt).

Serve with fluffy white rice and sliced avocado for a perfect budget-friendly meal.
