Welcome to everyday flava – bringing FLAVA to your everyday meals. Episode one – Chicken pasta bake. This isn’t just any Pasta bake. It’s a Pasta bake with FLAVA!
- 500g Fusilli pasta
- 500g Boneless Chicken Thighs cut into 2-inch
- 1 tsp sea salt
- 1 tsp Black pepper
- 1 tsp. Jerk seasoning rub
- 1 tbsp. Garlic powder
- 1 tsp. All-purpose seasoning
- 1 tsp. Paprika
- 1 tbsp. Olive oil.
- 1 medium red onion diced.
- 4 garlic cloves diced.
- ½ scotch bonnet pepper diced.
- 2 spring onions diced.
- 400g chopped tomatoes.
- 200ml Thick double cream
- 1 tbsp. Jerk BBQ sauce.
- 1 tbsp. Jerk paste.
- 25g Parsley diced.
- 150g Grated Mozzarella
- 150g Cheddar cheese
- 50g Breadcrumbs.
- Boil salted water in a saucepan for a few minutes then add your pasta and cook. (See packet instructions)
- Cut your Chicken thighs into 2-inch cubes then add to a mixing bowl.
- To make the marinade mix salt, black pepper, Jerk seasoning, Garlic powder, All-purpose, paprika and olive oil then mix into a paste then pour on to chicken and massage together and cook in Air fryer for 20 minutes at 160 degrees.
- Add some olive oil in a pan on medium heat then cook down onions, garlic, scotch bonnet until translucent. Add chopped tomatoes, double cream, Jerk BBQ sauce and jerk paste then mix and stir well.
- Add cooked chicken into sauce and mix then add some diced parsley. Mix in cooked pasta, then top with mozzarella cheese and mix again.
- Add pasta mix into a oven tray and cover with mozzarella and cheddar, then top with breadcrumbs and parsley for garnish.
- Cook for 25 minutes in pre-heated oven at 180 degrees until golden brown.
