In Jamaica during the 1600s the Slaver traders would take the best parts of a cow leaving the “fifth quarter” – head, tail, organs, feet, and skin – for the slaves. The slaves took what they could and created meals like Cow Foot Stew which is still eaten today

  • 3lb cow foot
  • 1 tsp All-purpose seasoning
  • 1 tsp minced garlic
  • 3 Spring onions (chopped)
  • 1tsp. Black pepper
  • 1 tsp. Salt
  • 1tbsp. Soy sauce
  • 1tbsp. Browning
  • 1tsp.  Ginger
  • 1 tsp. thyme
  • 8 pimento seeds
  • 400g Butter beans
  • 8 cups water
  • 2 Tbsp. veg oil
  • 1 Scotch bonnet
  • 2 carrots
  • ¼ Red bell pepper
  • ¼ Green bell pepper
  • 2 beef stock cubes
  • 2 tbsp. Corn-starch/ Flour

 

  1. Wash Cow foot with Water, Lemon and vinegar and drain
  2. Then Season Cow foot with 1 tsp All-purpose seasoning ,1 tsp minced garlic , 3 Spring onions (chopped), Paprika, 1tsp. Black pepper, 1 tsp. Salt, 1tbsp. Soy sauce , 1tbsp. Browning , 1tsp.  Ginger, 1 tsp. thyme, 8 pimentos seeds and marinate overnight in fridge.
  3. A 3 Tbsps. of olive oil to a pot and Add Cow foot along with the rest of the seasonings and cook cow foot till brown.
  4. Then add 8 cups of water with 2 beef stock cubes and Cook for 2-3 Hours stirring every 15 minutes (Add more water if necessary) add corn-starch/flour and cook until Cow foot is tender
  5. Then Add Carrots and Sweet peppers and spring onions, and 1 Scotch bonnet.
  6. Simmer for 15 minutes
  7. Then serve.
