BROWN STEW CHICKEN (AIR FRYER)

Jamaican Brown Stew Chicken in an air fryer 
Welcome to our Jamaican Air Fryer series — where we try Jamaican classics in an air fryer & see if it actually tastes good!

A true Jamaican favourite, known for its rich brown colour and deeply seasoned gravy. This air fryer method keeps all the flavour of the classic dish, with a quicker and more convenient approach for everyday cooking.

Chicken

  • 4 chicken leg quarters, chopped into 2–3 pieces
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp all-purpose seasoning
  • 1 tsp paprika
  • 1 tbsp browning
  • 1 tbsp vegetable oil

Vegetables & Sauce

  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 spring onions, chopped
  • 1 scotch bonnet (whole or sliced)
  • 2 sprigs fresh thyme
  • 240ml (1 cup) hot chicken stock
  • 2 tbsp ketchup

METHOD

  1. Prepare the chicken
    Trim off excess skin and fat, then chop the chicken into smaller serving pieces.
  2. Season well
    Place the chicken in a large bowl. Add the salt, black pepper, garlic powder, all-purpose seasoning, paprika and browning. Mix thoroughly, ensuring each piece is evenly coated.
    (For best results, cover and marinate for at least 1 hour, or overnight in the fridge.)
  3. Start the cooking process
    Add the vegetable oil to the air fryer and heat at 180°C for 2–3 minutes.
  4. Brown the chicken
    Arrange the chicken in the air fryer basket and cook at 180°C for 10 minutes, allowing it to develop colour and flavour.
  5. Cook the vegetables
    Remove the chicken and set aside. Add the onion, bell peppers, spring onions, scotch bonnet and thyme to the air fryer. Cook for 2–3 minutes until slightly softened and lightly caramelised.
  6. Build the sauce
    Pour in the hot chicken stock and ketchup, stirring to combine and create a rich base.
  7. Finish the stew
    Return the chicken to the air fryer and cook at 180°C for a further 20 minutes, until the chicken is tender and coated in a thick, flavourful sauce.
