Jollof bulgar juicy Jerk chicken, fried plantain and homemade coleslaw. With a delicious saucy gravy.

Now tell me a better combination than this! It So so delicious it made me want dance.

Since coming back from Ghana I’ve been dreaming about the jollof rice But I wanted to make something a bit more balanced. By using bulgar  instead of rice, as it  offer more fibre and rich in B vitamins,which are essential for various bodily functions.

Jollof

  • 1 red bell pepper chopped
  • 2 red onions chopped
  • 2/3 scotch bonnet peppers chopped
  • 1 tbsp. Fresh ginger. 
  • Handful of Fresh thyme 
  • 400g chopped tomatoes 
  • Salt and pepper to taste 
  • 4 tbsp. Olive oil or avocado oil 
  • 2 tbsp. Tomato puree 
  • 2 bay leaves 
  • 1 tbsp. All purpose seasoning 
  • 200g bulgar or quinoa 

 

Jerk chicken 

  • 300g boneless chicken thighs 
  • 1 tsp jerk seasoning rub 
  • 2 tbsp. Jerk marinade 

 

Coleslaw 

  • 1/2 white cabbage 
  • 2 large carrots peeled 
  • 4 tbsp. Light mayo 
  • Salt and pepper to taste 
  • Combine everything together.
  • Plantain, peeled and sliced then cooked in olive oil for 3-4 minutes.

    To make the Jollof add to your blender – bell peppers, red onion, scotch bonnet, ginger, fresh thyme, chopped tomatoes and salt and pepper then pulse until smooth.

    In a sauce pan add oil on a medium heat then saute the red onions for a few minutes until translucent. Then add tomato pure and mix in and cook for a few minutes then stir  in your jollof mix, add in bay leaves and season with all purpose. 

    Add in the bulgar and stir well then bring to a boil for a few minutes. Add a little water to ensure the liquid level is slightly above the rice. Then cook on a low heat for 10-12 minutes.

    For Jerk chicken, season chicken with jerk seasonings, then add to your air fryer for 20 minutes at 200 degrees. 

    Serve with coleslaw and plantain. And enjoy.
