This homemade jerk rub is an essential base seasoning for your jerk chicken – or any protein of your choice. Packed with bold Caribbean spices, it’s easy to make and full of flava

Ingredients

  • 1 tbsp sea salt

  • 1 tbsp black pepper

  • 1 tbsp garlic powder

  • 1 tbsp dried thyme

  • 4–6 sprigs of fresh thyme (leaves only)

  • 1 tbsp chilli flakes

  • 1 tbsp allspice

  • 6–8 pimento seeds (lightly crushed)

Method

  1. Add all the ingredients into a bowl.

  2. Mix well to combine into an even seasoning blend.

  3. Store in an airtight jar and use as a dry rub on chicken, fish, lamb, or even roasted vegetables.
