A Sunday classic made with love by me and my little chef Leo.
Ingredients
•4 roasting potatoes, peeled & cut into quarters
•4 carrots, peeled & sliced diagonally
•Salt & pepper to taste
For the Chicken:
•1 medium whole chicken
•1 tsp salt
•1 tsp pepper
•1 tsp garlic powder
•1 tsp paprika
•2 tbsp olive oil
•Juice of ½ lemon
Method
1.Preheat oven to 180°C (356°F).
2.Rub chicken with seasonings, olive oil & lemon juice.
3.Season potatoes & carrots, place in roasting tray around the chicken.
4.Roast 1 hr 20 mins until golden & cooked through.
5.Carve & enjoy with your favourite sides.
