Salmon & Rice One Pot

An easy, flavour-packed family meal perfect for busy parents.

We’re in the kitchen with Aaron from Raising Boys to Men, whipping up a nourishing one-pot salmon and rice dish that’s as good for the kids as it is for adults. As a father of two, Aaron knows the importance of maintaining a healthy, balanced diet while keeping things simple in the kitchen. This recipe is fuss-free, flavourful, and full of goodness.

Ingredients

For the Salmon:

•4 salmon fillets

•¼ tsp sea salt

•½ tsp black pepper

•1 tbsp garlic powder

•1 tbsp all-purpose seasoning

•1 tsp jerk seasoning

•2 tbsp olive oil

•Juice of ½ lemon

For the One Pot:

•1 red onion, diced

•4 garlic cloves, finely chopped

•1 green bell pepper, diced

•1 red bell pepper, diced

•2 tbsp turmeric

•500ml vegetable stock

•220g long grain rice (washed)

•Salt & pepper to taste

•Fresh parsley, for garnish

For the Gravy:

•Remaining veg stock

•2 tbsp jerk BBQ sauce

•125ml water

•1 tsp all-purpose seasoning

Method

1. Marinate the Salmon

Season the salmon fillets with sea salt, black pepper, garlic powder, all-purpose seasoning, jerk seasoning, olive oil, and lemon juice. Let sit while you prep the vegetables.

2. Pan-Fry the Salmon

In a large, deep pan, heat 1 tbsp of olive oil over medium heat. Pan-fry the salmon for 5–7 minutes on each side until golden and crispy. Remove and set aside.

3. Sauté the Vegetables

In the same pan, add a little more oil if needed and sauté the onions, garlic, and bell peppers for a few minutes until soft and translucent.

4. Add Seasoning & Rice

Stir in the turmeric, season with salt and pepper to taste, then add the washed rice. Mix well and let the rice toast for 2–3 minutes with the vegetables.

5. Add Stock & Simmer

Pour in the vegetable stock and stir well. The liquid should sit about a fingertip above the rice level. Cover and simmer on low heat for 25 minutes.

6. Steam the Salmon

After 15 minutes of cooking, place the salmon fillets back on top of the rice. Cover and steam for the remaining 10 minutes, allowing the flavours to blend beautifully.

7. Make the Gravy (Optional)

While the rice finishes, combine the remaining veg stock with jerk BBQ sauce, water, and all-purpose seasoning in a small saucepan. Bring to a gentle simmer for a few minutes until slightly thickened.

8. Garnish & Serve

Fluff the rice, garnish with fresh parsley, and drizzle with gravy if desired. Serve hot and enjoy this feel-good, one-pot Caribbean-inspired meal.
