Jerk chicken and Pineapple Salad is a healthy recipe with incredible taste. Great dish for a snack or to take to work. Made with succulent chicken breast marinated in Jerk seasoning to give it that spice, also accompanied by a pineapple salad to give it a cool balanced taste.
- 1LB Chicken Breast
- 3 Tbsp. Jerk Marinade/Paste
- 2 tbsp. Jerk seasoning
- 1 tbsp. Chicken seasoning
- 1 Medium lettuce
- ½ chopped onion
- ½ cup spring onions
- 1 cup mixed peppers
- 1 cucumber
- 1 cup diced pineapple
- 4 tomatoes
- 1 tbsp. hot pepper sauce
- 1 tbsp. lemon juice
- 1tbsp. Pineapple Juice
- 3 tbsp. honey
- 1 tsp. Black pepper
- 1 tsp Salt
- Wash chicken breast with lemon/water
- Season Chicken with 3 tbsp. Jerk paste, 2tbsp. Jerk seasoning, 1tbsp chicken seasoning
- Marinate Chicken in fridge overnight or up to 8 hours
- Wash all your salad ingredients and chop/slice
- Use a bowl and combine all salad together 1 Medium lettuce, ½ chopped onion , ½ cup spring onions, 1 cup mixed peppers, 1 cucumber , 1 cup diced pineapple , 4 tomatoes and place in fridge.
- Make salad dressing by combining 1 tbsp. lemon juice, 1tbsp. pineapple juice, 1 tsp salt, 1tsp pepper, 3 tbsp. honey, ¼ cup of water. 1 tbsp. sweet chilli sauce, 1tsp. hot pepper sauce and place in fridge.
- Place your Chicken breast on a grill for 10 mins or cook both sides for 5 minutes.
- Chop chicken breast into small pieces
- Pour ¾ of the salad dressing onto salad and mix together.
- Then serve by laying your chicken breast on to the bed of salad.
- Then drizzle remainder of salad dressing onto dish.
