This is a recipe that we ate a lot while in Jamaica, it’s a very popular dish that is eaten as a quick snack. A green plantain is fried and then smashed and fried again to make a delicious crispy snack. We’ve made a a delicious scotch bonnet salsa to complement this dish!

  • 2 Ripe green bananas
  • Vegetable oil
  • Sea salt to taste
  • 2 Scotch bonnet peppers (de-seeded)
  • 4 large tomatoes
  • 4 garlic cloves
  • 15 baby tomatoes
  • 1 tsp salt
  • 1tsp black pepper
  • Lemon juice
  • 15g parsley
  • Olive oil

Scotch bonnet salsa Grill your large tomatoes or pan fry with a likkle oil and cook until soft Now combine 2 scotch bonnet peppers and 4 garlic cloves and crush together or blend. Now in a large bowl add your baby tomatoes, along with the soft large tomatoes, scotch bonnet and garlic lemon juice salt and pepper and mix together, crush all ingredients down until soft or blend together. Now use 2 ripe green plantains cut the ends off and make a slit down the middle with a knife carefully, open the green banana and chop into thick chunks. Use a frying pan with a slightly deep fry of vegetable oil, and fry plantains until cooked, then take plantains and drain on paper towel, Wit for the plantain to cool down then smash using a clean cup bottom or plate, crush until flat a few times then fry the crushed plantain again in the same oil until crispy. Serve with salsa and enjoy.
