We call this the Half English / Half Caribbean. Growing up in London, and having a Caribbean family meant we had the best of both worlds. In London you would have your typical Fry-up on a Saturday morning after a long night or after a hangover, Mum always used to throw in some Caribbean FLAVA, with the Ackee and Dumplings!

 

  • 3 Vegan sausages
  • Ackee 540g
  • 1 medium onion
  • ¼ Red bell pepper
  • ¼ Green bell pepper
  • 2 Garlic cloves
  • 1 scotch bonnet pepper
  • 1 small tomato
  • 2 tsp. Black pepper
  • 4 sprigs Thyme
  • 2 tsp. Paprika
  • Baked beans 385g
  • Mushrooms 125g
  • Dumplings
  • 1 Plantain (Sliced)
  • 1 Avocado (Sliced)
  • 1 Large Tomato.

 

Vegan sausages

Preheat oven to 180ºC/Fan 160ºC/Gas Mark 4. Place vegan sausages onto a preheated baking tray and cook in the centre of the oven for 15 minutes, turning occasionally

Ackee

Open Ackee with can opener and strain in a strainer to remove all juices. Add 1tbsp. of olive oil to a frying pan on high heat; add onions garlic, peppers, and sauté for 2 mins. Add Ackee and simmer for 5-7 mins. Add Black pepper, thyme and paprika, the gently fold Ackee over.

Baked beans,

Cook baked beans, on stove for 5 minutes on medium heat, or microwave for 3-4 Minutes. Season with Black pepper, thyme and paprika for more FLAVA!

Mushrooms,

Wash and slice mushrooms, then set aside. Add 1 tbsp. olive oil and wait to heats up, then add mushrooms then add salt, black pepper, thyme, paprika mix cook and simmer for 10 minutes.

Dumplings

2 cups Self raising flour/ Flour (unbleached)

1 tsp. baking powder (Only if flour is used)

1 cup water

1 tsp sea salt

1 tsp. vegan butter

1 tsp brown sugar

Firstly you’ll need a mixing bowl , add 2 cups of self-raising flour, salt, sugar, and vegan butter, mix together and gradually add water. Use your hands and start kneading to form dough. Add more flour or water if necessary. Roll into a ball of dough and let it sit for 10 minutes.

Use a frying pan with vegetable oil (shallow fry) on high heat. Roll dough in a circular shape and press your thumb in the middle. Add dumplings to frying pan turn down to medium heat, a cook until golden brown.

Plantain

Score plantain and peel open, then slice into thick long shapes, shallow fry with vegetable oil until golden brown on each side.

Tomatoes

Sliced tomatoes and place on oven grill until chargrilled.

Avocado.
