We’ve created some Mediterranean Caribbean FLAVA with this quick and easy plantain humus with a kick that everyone will enjoy, Thick, creamy, sweet and enjoyable. We recommend eating with pitta bread, hardough bread and veggies.
1 ½ Canned chickpeas
2 Plantains sliced
2 tbsp. Tahini
60ml olive oil
4 Garlic cloves
1 scotch bonnet pepper
½ Lemon juice squeezed
1 tsp salt
1tsp black pepper
125ml Water or canned chickpea water
Firstly, you’ll need to peel open your plantain by scoring down the middle and peel it open. Then sliced the plantain into chunks. Then you need to boil the plantain until cooked and drain it. Cool the plantain down with some cold water.
Now in a food processor or a blender, add all the above ingredients and blend until smooth for about 3-5 minutes. Add water if necessary if the humus is too thick.
Plate the humus into a bowl then drizzle some olive oil on top and serve with some pitta bread, hardough bread or veggies.
