ingredients

1 400g can green lentils#

2 tbspns veg or extra virgin olive oil

1 med onion

1 med carrot

2 clove garlic or 1 tspn garlic powder

1 stick celery

(optional) 1/2 red & orange bell pepper

I scotch bonnet

4 med mushrooms

1 tspn blk pepper

1 tspn salt

1 tbspn paprika

1 tspn ginger powder

1 tbspn of all purpose seasoning

2 tbspns of chia seeds

1 cup of breadcrumbs

1 cup of sage & paxo stuffing mix

1 cup of mixed nuts & dried fruit

Method Heat oil in pan and add chopped onions,vegetables and seasoning. Once thats cooked leave to cool and combine the breadcumbs, paxo sage & onion stuffing mix with nuts and dried fruit. Then mix the chia seeds with 3 tbspns of warm water leave until it become a thick runny paste. Add this to the dry mixture of nuts and dried fruit. Adding more tbspns as necessary if too dry. Next, add your cooked vegetables and mix everything together. Once combined put the mixture in a loaf tin and bake in the oven for 1hr at 170c
