1 cup plain flour

1 cup fine cornmeal

2 tbsp baking powder

2 tbsp brown sugar

½ cup whole milk (add more if needed)

Vegetable oil for frying
Coleslaw

2 cups white cabbage, shredded

1 carrot, grated
-
3 tbsp mayonnaise

½ tsp black pepper

1 tsp sugar
Jerk Chicken

500g boneless chicken thighs
-
1 tbsp jerk dry seasoning
-
1 tbsp jerk paste
Extras

1 ripe plantain, sliced and fried

2 tbsp BBQ sauce
Method

Make di Festival – Mix flour, cornmeal, baking powder and sugar in a bowl. Add milk likkle by likkle to form a soft dough. Roll into small oval shapes. Heat oil and fry until golden brown. Drain on paper towel and set aside.

Prepare di Chicken – Season chicken thighs with jerk seasoning and paste, then place in air fryer at 200°C for 18–20 minutes until cooked through and slightly charred. Chop into bite-sized pieces.

Coleslaw Time – In a bowl, mix cabbage, carrot, mayonnaise, black pepper and sugar until creamy.

Fry Plantain – Slice ripe plantain diagonally and fry in oil until golden and caramelised.

Build it Up – Slice festival lengthways. Add a spoon of coleslaw, top with fried plantain, pile on jerk chicken, and drizzle with BBQ sauce. Close it up and enjoy!
