Not every Sunday was a big cook-up, Sometimes Mum would send Dad out to grab fried chicken, with rice and peas, coleslaw and salad Today we recreated that childhood favourite at home with the Ninja Crispi Pro

Crispy, juicy and packed with flavour, this easy air-fried chicken is inspired by those stress-free Caribbean Sunday dinners.

Ingredients

  • 4 chicken leg quarters, cut into 2 pieces
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp all-purpose seasoning
  • 150g plain flour
  • 50g cornflour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp all-purpose seasoning
  • 1 tbsp water
  • Olive oil spray

Method

  1. Pat the chicken dry and place in a large bowl. Add the salt, black pepper and all-purpose seasoning. Mix well to coat evenly.
  2. In a separate bowl, combine the plain flour, cornflour, baking powder, salt, black pepper and all-purpose seasoning.
  3. Sprinkle in the water and mix with your fingertips, This helps create an extra crispy coating.
  4. Add the seasoned chicken to the flour mixture and coat thoroughly. Shake off any excess flour.
  5. Arrange the chicken pieces in the Ninja Crispi Pro glass cooking tray in a single layer, leaving space between each piece.
  6. Lightly spray the chicken with olive oil.
  7. Cook at 200°C for 24 minutes, turning halfway through cooking and spraying lightly with oil again.
  8. Continue cooking until golden brown, crispy and the chicken reaches an internal temperature of 75°C.

Serve with:

  • Rice and peas
  • Coleslaw
  • Mixed salad
  • Fried plantain
