Tender, crispy & highly addictive! You’ve been warned!

640g Mini chicken fillet
1 tsp salt
1 tsp Black pepper
1 tsp All spice
1 tsp Dried thyme
1 tsp Minced Garlic
1 tsp Chill flakes
1 tsp Jerk Bbq sauce
400ml coconut milk
175g Plain Flour
2 tbsp. Cornflour
1 tsp. Baking powder
1 tbsp. curry powder
Pinch of sea salt & black pepper
1 tbsp butter
2 tbsp honey
175ml Jerk BBQ sauce
Spring onions and parsley for Garnish.

Season chicken fillets with seasonings above then add coconut milk and marinate.

In a separate bowl add flour, cornflour, baking powder, curry powder, salt and pepper then mix.

Add Chicken fillets in flour mixture then deep fry for 5-6 minutes until golden. Then rest.

In a saucepan add butter, honey and Jerk bbq sauce and cook on medium heat and whisk until smooth, pure onto chicken then mix and serve!
