Juicy Roast Chicken

  • 1 Whole Extra Large Chicken
  • 1 tsp. All-purpose seasoning
  • 2 Large carrots (Chopped)
  • 1 tsp. Chicken seasoning
  • 1 tsp. garlic
  • 1sp. Black pepper
  • 1 tsp. olive oil
  • 1 whole large onion
  • 2 spring onions
  • 1 tsp. Paprika
  • 1tbsp. butter
  • Baby potatoes
  • 4 Sprigs of Fresh thyme
  • 1 Red bell pepper
  • Chicken stock cubes.
  1. Wash your chicken with lemon, vinegar and water then pat dry,
  2. Poke holes into the chicken using a sharp knife.
  3. Melt butter and add olive oil and rub all over chicken, and drizzle some olive oil over it.
  4. Combine all purpose seasoning, chicken seasoning, paprika, Black pepper, garlic into a bowl, mix together and rub all over and inside the chicken.
  5. Score 1 whole onion and insert into the chicken cavity along with spring onions and fresh thyme.
  6. Put your bell peppers, carrots, veg, scotch bonnet into a backing tray and drizzle a likkle olive oil on top and season with salt and pepper, Then place the whole chicken on top of the vegetables.
  7. Add Chicken to a pre-heated oven on 180 degrees for 1.5-2 hours in the middle tray.
  8. (To make additional gravy, add 2 chicken stock cubes and add ½ cup of hot water to the remaining juices of the baking tray and mix together)
