Nanny is back with her famous baked fish recipe for mothers day! this recipe brings so much memories with our family growing up. Nanny makes the best fish in the world, she would always make it for us for easter. Its cooked differently to your usual Escovitch fish as this one is baked in the oven, which is more healthier! and doesn’t stink up di yard! lol
- 4 Snapper fish
- 1 tsp. black pepper
- 1 tbsp. all purpose seasoning
- 1 tbsp. curry powder
- 1 large onion rings
- 1 red bell pepper rings
- 1 green bell pepper rings
- 1 orange bell pepper rings
- 1 carrot in strips
- 2 spring onions strips
- 6 sprigs of fresh thyme
- 4 garlic cloves
- pinch of salt
- 1 scotch bonnet chopped
- olive oil
Get your fishmonger to clean out your fish, then make sure you also clean with lime/lemon vinegar.
score line into fish and season fish with black pepper and all purpose seasoning curry powder and veggies making sure the fish is well covered.
Use a oven tray then add some olive oil to the base. stuff fish with fresh thyme and scotch bonnet pepper and pick out carrots peppers and onions and place fish into baking tray and cook for 1 hour at 180 degrees.
30mins into cooking process add veggies back on top of fish and cook for 30 minutes more. until fish is golden brown.
serve with rice or hardough bread.
