A quick, tasty stir-fry made with leftover steak, frozen veg, and that old packet of noodles hiding in the cupboard.
Ingredients:
- 300g quick-fry steak strips (fresh or thawed from frozen)
- ½ green bell pepper, sliced into strips
- ½ red bell pepper, sliced into strips
- ½ yellow bell pepper, sliced into strips
- 1 medium onion, sliced into strips.
- 1 cup frozen broccoli florets
- 2 tbsp olive oil
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp all-purpose seasoning
- ½ tsp garlic powder
- 2 tsp light soy sauce
- 500ml beef or chicken stock
- 300g dried noodles
- 500ml water
- 1–2 fresh chillies, sliced (optional)
- 2 spring onions, sliced (for garnish)
- Season the steak: In a bowl, add steak strips with salt, pepper, all-purpose seasoning, and garlic powder and soy sauce.
- Brown the steak: Heat 1 tbsp olive oil in a large frying pan over medium-high heat. Sear steak for 2–3 minutes until browned. Remove from the pan and set aside.
- Cook the vegetables: In the same pan, add remaining olive oil. Sauté onion, bell peppers, and broccoli for 3–4 minutes until slightly softened.
- Add steak back Add the steak back to the pan, tossing everything together until heated through.
- Add sauce: Pour in soy sauce and beef/chicken stock. Stir to combine.
- Cook noodles: Cook dried noodles in separate saucepan with the water. Cook for 4–5 minutes, then add to the pan with steak and vegetables and mix.
- Garnish: Sprinkle over sliced chillies and spring onions then serve
