A quick, tasty stir-fry made with leftover steak, frozen veg, and that old packet of noodles hiding in the cupboard.

Ingredients:

  • 300g quick-fry steak strips (fresh or thawed from frozen)
  • ½ green bell pepper, sliced into strips
  • ½ red bell pepper, sliced into strips
  • ½ yellow bell pepper, sliced into strips
  • 1 medium onion, sliced into strips.
  • 1 cup frozen broccoli florets
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp all-purpose seasoning
  • ½ tsp garlic powder
  • 2 tsp light soy sauce
  • 500ml beef or chicken stock
  • 300g dried noodles
  • 500ml water
  • 1–2 fresh chillies, sliced (optional)
  • 2 spring onions, sliced (for garnish)
  1. Season the steak: In a bowl, add steak strips with salt, pepper, all-purpose seasoning, and garlic powder and soy sauce.
  2. Brown the steak: Heat 1 tbsp olive oil in a large frying pan over medium-high heat. Sear steak for 2–3 minutes until browned. Remove from the pan and set aside.
  3. Cook the vegetables: In the same pan, add remaining olive oil. Sauté onion, bell peppers, and broccoli for 3–4 minutes until slightly softened.
  4. Add steak back Add the steak back to the pan, tossing everything together until heated through.
  5. Add sauce: Pour in soy sauce and beef/chicken stock. Stir to combine.
  6. Cook noodles: Cook dried noodles in separate saucepan with the water. Cook for 4–5 minutes, then add to the pan with steak and vegetables and mix.
  7. Garnish: Sprinkle over sliced chillies and spring onions then serve
