We used to love having fritters growing up, they are so fun and easy to make too! These plantain fritters are so tasty and enjoyable any time of the day!

Feeds 4-6

3 over ripe plantain

4 tbsp sugar 

1 tsp vanilla 

250g plain flour 

1 tsp baking powder 

125ml coconut milk

125ml water 

1/2 tsp nutmeg

1/2 tsp cinnamon 

vegetable or sunflower oil

Honey or drizzle for topping

Make sure you use very ripe plantain the ones with the black marks on it. They’re much sweeter. 

Firstly peel your plantain and add to a bowl them mash them with a potato masher or fork until smooth. Then add sugar, vanilla. Plain flour, baking powder, coconut milk, nutmeg and cinnamon and mix together until smooth. Making sure your looking for sloppy consistently, not too runny and not too thick. Add more flour or liquid if necessary. 

Add oil enough for shallow fry, to a frying pan on high heat enough, once hot enough, turn down to medium heat. With a large soup serving spoon, carefully spoon the plantain mixture into your frying pan. Cook until golden brown each side and place on a paper towel.
